Oh, how I love the colour of fresh raw beetroots…I roast them with shallots and olive oil…and steam them with vegetable stock and a little apple vinegar until they are soft, then mix it with yoghurt, 1 tablespoon sour cream and 1 tablespoon creme fraiche and the pickled matjes herring filets…
…add salt and pepper and enjoy it with fried poptaoes!
