Green Dots Strudel stuffed with Spicy Red Cabbage

  • 200 gr flour ( I used half wheat flour half wholemeal spelt flour)
  • 7 Tbsp oil (rapeseed/sunflower)
  • 1 pinch of salt
  • 80 ml warm water
  • 150 ml coconut milk
  • 1 small red cabbage
  • 1/2 a red onion
  • a handfull of green beans
  • spices (salt,pepper, chili, nutmeg, masala,…)
  • a bit more vegetable oil
  • vegan
  • lactofree

I created this recipe (which you can also find in my german cookbook Sophias vegane Welt) for a dinner event I held in Berlin and Vienna… THE GREEN DOT DISEASE, a phenomenom that is explained here
Means every course with have green dots in it and here’s the recipe for the amuse gueule that I am gonna serve you.

It is a lot of fun to make a strudel and it is not so difficult as you might think, a bit like yoga - first you think it’s weird but turns out to be great! Just give it a try!

Green Dots Strudel stuffed with Spicy Red Cabbage

Preparation:

Heat some water and fill it into a heat-proof bowl. Leave it there so that the bowl will keep the warmth. Mix flour, oil, salt and water and knead very well for about 5 minutes. Put the water from the bowl into a deep pan and blanch the washed green beans with cut-off ends in there for 3-4 minutes. Meanwhile leave the dough underneath the warm bowl for 30 minutes. Grate the cabbage and dice the onion, after you removed the beans and the water from the pan, heat a bit of oil and roast the cabbage-onion-mixture for a few minutes. Add the coconut milk and let it reduce on small heat. Spice it up with salt, pepper, chili, nutmeg, whatever exotic you have in your cupboard (cinnamon, clove, cardamom,..).

Pre-heat the oven to 180 ° C .

After half an hour roll the dough on a flour-sprinkled clean kitchen towel (that will make it easier to roll the strudel later when it’s filled). Roll it as thin as you can and then - carefully - take it with your hands and stretch it without ripping it apart. That’s the hardest part, you have to be very sensitive but it’s not too difficult, just try it and if it ripps - it’s not the end of the world, try to fix it by gluing it with some oil.

If you have a nice big piece of strudel dough lying in front of you - place the not-too-juicy cabbage-filling in the middle and add the green beans on it. Using a food brush apply some vegetable oil on the edges and start rolling it in by using the towel as a support.  When finished apply some more oil on the strudel and bake it for 25 minutes. Enjoy with green salad or something more exotic like papaya salad.
